It is that time of year where our CSA has an abundance of zucchini and yellow squash. Below are 2 of my favorite recipes to incorporate zucchini and squash into your next raw meal!

Zucchini Pasta with Creamy Red Pepper Sauce

Yield: 2 ¾ cups sauce 5-6 cups zucchini “noodles” (probably about 5-6 zucchinis) – use spiralizer or mandolin
1 red bell pepper roughly chopped
1 cup macadamia or other nuts
1 cup almond milk
2 tbs hemp seed or olive oil
½ clove garlic
salty seasoning of your choice to taste
stir in:
¼ cup chopped fresh basil
2 tbs chopped fresh parsley

Method:
1. In a blender, combine the red bell pepper, nuts, almond milk, garlic, and flavor enhancer. Blend well and season to taste. 2. Stir in the fresh herbs. Toss with noodles or top noodles and serve.

Creamy Yellow Squash Dressing

Yield: 3 cups
¼ cup extra virgin olive oil
1 ½ yellow squash chopped
1 tbs Italian seasoning
1 tsp dried dill
½ cup fresh parsley
1 clove garlic
water or vegetable juice as needed to blend
your choice of flavor enhancer to taste

Method:
In a blender, combine all ingredients. Blend well and season to taste. Pour over your favorite salad!
