I don’t know about you but I have been craving sprouts this summer! I also had some extra grapefruit I was looking to use up. I also like to get my Brazil nuts in each day for the selenium and they are also a great source of protein. The avocados are a great way to get healthy fats and some oomph in the salad. And my favorite is the kick from the cayenne in the dressing.. Put them all together and you have a power packed lunch. This salad is an amazing pick me up and can really help you get through the day! What I love most about it is how simple it is. This salad can be made in 5 minutes!

1. Chop the grapefruit, avocado, brazil nuts and pea shoots.

2. Combine in Vitamix: olive oil, juice of lemons, dash of cayenne (or more depending on your spice tolerance), chunk of ginger, raw honey. Blend on high for 30 seconds.

Salad

Desired amount of Grapefruit Chunked (I used half)
1 Avocado Chunked
½ Cup Brazil Nuts roughly chopped
1 Cup Chopped Pea Shoots

Dressing

⅓ Cup Olive Oil
Juice of 1 and ½ Lemons
1 Dash Cayenne Pepper
½ inch Chunk of Ginger
¼ teaspoon Raw Honey

Combine and blend on high in vita-mix for 30 seconds
