Key Lime Chia Pudding

This key lime chia pudding recipe is simple, yet tastes delightful. It makes for a great breakfast, snack or post workout fuel. The benefits of chia are endless! Chia is a great source of protein, fiber and loaded with vitamins, minerals, and Omega 3. Combined with all of the other ingredients this is a true power snack!

Chia Pudding
3/4 cup coconut mylk
1/4-1/3 cup chia seed depending on how think you like it
1 teaspoon sweetener of your choice. I used honey but you could use vanilla, coconut sugar, etc.
Whisk together and refrigerate to set

Key Lime Soft Serve
1 frozen banana
2 kiwis
Juice from 1/2 lime
Blend in food processor or vita-mix
Layer the bottom of your mason jar with
1/3 cup walnuts
2 Tablespoons pumpkin seeds
Add the chia pudding
Add the key lime soft serve
Top with
1 Tablespoon walnuts
1 Tablespoon pumpkin seeds
1 Tablespoon coconut flakes
1/2 kiwi sliced
