This exciting salad is made with Jicama, a large tuberous root that can be eaten raw (naturally!) and makes a kicking summer slaw. In my recipe I use nectarines, avocado, snap peas, lime juice, orange juice, Brazil nuts and Jicama sliced into matchsticks.


Summer Jicama Salad

1 medium jicama

1 ripe nectarine

1 ripe avocado

1 cup snap peas

1/2 cup raw brazil nuts

2 Tbs olive oil

juice of 1 lime

juice of 1 orange

salt to taste

Remove the outer skin of the jicama with a vegetable peeler.

Cut the jicama, nectarine, and snap peas into matchsticks.

Remove skin from avocado and cut into cubes. Roughly chop brazil nuts.

Add all ingredients to a medium sized bowl.

Add juice of lime and orange and 2 Tbs olive oil to bowl. Season with salt and serve.
