Vegetable Satay 
Yield: about 2 1⁄2 cups of sauce

Assemble skewers of any or all of the following: red, orange, or yellow bell peppers ,onions,
yellow squash, zucchini, cherry tomatoes, broccoli, mushrooms

Sauce:

1/2 c almond butter
3⁄4 c. cashews
1 1⁄4 c coconut milk
1⁄2­1 T. red curry paste
1⁄4 c. soy sauce
2 T. lime juice or rice vinegar
cayenne, to taste
sweetener of your choice, to taste
sea salt, to taste

Method:

1. Skewer desired veggies and marinate in any vinaigrette style dressing (I like blending up
ginger, garlic, sesame oil, soy sauce, and lime). Pour over the skewers and marinate
